A Taste of Cagliari

I’ve decided that the day after my weekly blog post of an international city, I will post a recipe for a food based out of the area. So here’s one for my blog post about Cagliari, Italy yesterday!

For this weeks recipe, I chose Culurgiones which is a traditional Sardinian kind of ravioli basically. (I couldn’t find a picture of them that didn’t have copyright attached so you’ll have to look it up or check out the YouTube video below) These take some time so if you decide to make them, be patient and don’t try to fit it into a busy schedule.

Ingredients:

Pasta Base:

250 grams semolina

250 grams all-purpose flower

3 tablespoons of extra virgin olive oil

1 teaspoon salt

100 grams of warm water

Filling:

4 medium sized potatoes

50 grams sheep’s milk ricotta

50 grams of grated Pecorino cheese

Chopped fresh mint leaves

4 tablespoons of extra virgin olive oil

1 clove if minced garlic

Instructions:

Pasta Base:

Add warm water to a mix of the semolina, flour, olive oil, and salt. Knead the dough while slowly adding the water. Once the dough is nice and bendable, roll it into a ball and place it in a bowl. Keep the bowl covered for half an hour.

Filling:

Peel the potatoes and boil them in salted water. Boil them until they are soft. Use a ricer to rice the potatoes and mix with the cheeses, mint, and olive oil. Cool the filling for an hour.

Preparing the dough with the filling:

Roll out the dough until it is thin. Cut circles that are 8 centimeters in diameter. Use a teaspoon to put a small amount of filling in each circle. The next step is to braid the dough which can take some practice.

Braiding the dough:

Hold the circle with filling in your palm and fold one side over the filling. Pinch the middle and plait the two sides together. Keep doing this until the whole circle is braided together. (For a visual, I have pasted a YouTube video link of the braiding being done)

Boil the Culurgiones for five minutes in salted water.

These are eaten traditionally with tomato sauce and pecorino cheese sprinkled on top.
